Our policy last up until 14 days before your class start time . If you are within 14 days of your class , unfortunately we do not offer a refund or exchange.

To qualify for a refund, you need to request it beyond the initial 14-day period. The refund amount will be 50% of the total payment made for our cooking class.

Regarding the deposit category

Regrettably, deposits for classes are non-refundable. However, within a 30-day period, you have the option to exchange your class for any other cooking class offered by Troc’s Kitchen. Chef Troc always begins the his cooking class by introducing themselves and interviewing all the participants prior to starting.

Once you’ve discussed your activities in Phu Quoc and your shared experience in the food industry, Chef Troc will begin the session by demonstrating the process of preparing Vietnamese coffee.

Vietnam is known for its significant coffee production, mainly consisting of Robusta and Arabica varieties. As the second-largest coffee exporter worldwide, after Brazil, Vietnam’s coffee industry has strongly influenced the coffee culture in Phu Quoc. The streets are dotted with numerous coffee shops and cafes, ensuring that tourists have plenty of choices to satisfy their craving for a cup of java. However, we won’t be demonstrating how to prepare Vietnamese coffee using any type of machine.

After putting the beers aside, it will be time to focus on the food. The initial culinary venture will involve crafting fresh spring rolls (gỏi cuốn) using rice paper, prawns, and a variety of fresh greens and herbs. Accompanying these delectable rolls will be a zesty dipping sauce featuring fish sauce, which is considered the essence of Vietnamese cuisine and a fundamental element found in most local delicacies.

We then attempted making Vietnamese skewers called nem nuong, which consist of minced pork meat blended with lemongrass. Ca Kho To, also known as clay pot fish, is a traditional Mekong Delta dish where fish is cooked with sugar and coconut water in a clay pot. This cooking method results in succulent fish slices and a luscious caramelized sauce.

This dish, originating from South Vietnam, features an abundance of fish due to the close proximity to the Mekong Delta. While traditionally prepared using ca loc / snake-headed fish, in Western regions where fresh supplies are scarce, catfish or mackerel are commonly substituted. Nonetheless, this recipe can be adapted to include any variety of fish.

The dish known as cá kho tộ undergoes braising and caramelization with a mixture of fish sauce, sugar, and coconut water. It can also feature sliced scallions, onions, or garlic as additional components.

Traditionally, cá kho tộ is accompanied by a bowl of canh chua cá, a fish-based Vietnamese soup, and served with rice on the side.

Although the clay pot is essential and is also incorporated in the name of the dish, the fish isn’t always prepared in the clay pot. In restaurants, it’s often cooked in a frying pan. The braised fish is then transferred to a clay pot for serving. The pot is sometimes even preheated to create the illusion that the dish just came off the fire.

How to make Ca Kho To ?

First, the fish is marinated in a mixture of fish sauce, sugar, garlic . The fish is seared with onion and garlic in a hot clay pot (or a non-stick pan) before the ingredients for the caramel sauce – sugar-fish sauce, coconut water ( Mekong Delta style ) you jiust use normal warter its also work for this and chilli pepper – are added. The fish is braised in half an hour in the liquid, which slowly turns into a sticky sweet mass. Finish with extra fish sauce and/or sugar, spring onion, black pepper and extra red chili pepper.
