Arriving at the destination

Chef Pham Dinh Chuong, also known as Troc, leads the cooking class we chose in Duong Dong, the central and most populated town on the island. The class is conveniently located just a 15-minute walk from the Duong Dong market. Troc offers classes both in the mornings and evenings, every day of the week, with each session lasting approximately four hours (duration may vary depending on the number of students). Whenever I travel, I make it a point to take local cooking classes to understand local cuisine and appreciate local food better.
So, when I visited Phu Quoc, I decided to take Chef Troc’s cooking class after checking a lot of reviews. I must say this was one of the best experiences I had so far. Chef Troc is a flamboyant character, that itself will keep you entertained through your class. He is a seasoned chef and knows his food really well.
I am that geek who asks a lot of questions and chef answered all of them with patience and flair. What i loved the most about the cooking experience is that he showcased concepts and techniques to inculcate and understanding of the recipe instead of just sharing recipe instructions.
I think I can make most of the dishes without following the recipe because of the concepts he taught. I took a solo class, which made it really special for me. I had shared a list of dishes i wanted to learn and he accommodated. Unfortunately, towards the end of the class I started feeling a bit unwell due to personal reasons, and Chef turned into a complete hero. He helped me out to get back to my hotel immediately.
He later got packed all the food i cooked, beautifully and got it delivered to my hotel so that my husband and i could enjoy the meal i cooked. He even offered me to join another class he was having the next day as he felt so bad that i could not finish my session with him. I was really floored by that gesture.
Not many ppl care but he did. I joined a class with a few others the next day. This experience was amazing too as i got to make more dishes and made a few friends. I learnt a lot more about Vietnamese cuisine from the amazing Chef Troc. I will never forget him and the team behind him. Thank you for making this my best Vietnamese Experience:)
