Discover the Vibrant World of Vegan Cuisine in Vietnam.
Before embarking on your culinary adventure in Vietnam, gaining some essential knowledge can help you make the most of your trip, especially if you’re following a vegan diet. Vietnam’s vegan cuisine is renowned for its vibrant flavors, delicious dishes, and eco-friendly approach to cooking.
One of the highlights of your trip should be participating in a vegan and vegetarian Vietnamese cooking class. We chose to attend a class led by Chef Pham Dinh Chuong, also known as Troc, which is located in Duong Dong, the island’s central and most populated town. Conveniently situated just 10-15 minutes by car from the airport, Troc offers classes both morning and evening every day of the week. Each session lasts approximately four hours, depending on the number of participants.

Vegan and Vegetarian Delights in Vietnam
Vietnam’s cuisine is a vibrant tapestry of flavors, fresh ingredients, and exciting textures. From steaming bowls of pho (noodle soup) to colorful rice dishes and fresh spring rolls, there’s something for everyone. Vegans and vegetarians will be pleasantly surprised by the abundance of delicious options available.
A Bounty of Vegan and Vegetarian Dishes:
- Pho Chay: This vegan twist on the classic pho features a flavorful broth made with vegetables, rice noodles, and a variety of fresh or crispy vegetables and tofu.
- Com Chay: Enjoy a variety of vegetarian or vegan rice dishes. These typically come with stir-fried vegetables, tofu, and delicious soy-based protein alternatives.
- Goi Cuon Chay: Fresh spring rolls are a staple in Vietnam. Look for vegetarian or vegan versions filled with a delightful mix of vegetables, herbs, tofu, and sometimes mushrooms or soy-based protein.
- Banh Mi Chay: Experience the iconic Vietnamese sandwich in a vegan or vegetarian way! Filled with marinated tofu, fresh vegetables, flavorful herbs, and a variety of sauces, this is a must-try.
- Xoi Chay: Sticky rice forms the base for this dish, topped with stir-fried or steamed vegetables, tofu, or soy-based protein alternatives.
- Braised Tofu and Vegetables: Discover a variety of stir-fried dishes featuring tofu or soy-based protein cooked with an assortment of colorful vegetables.
Important Note for Vegans:
Fish sauce is a common ingredient in Vietnamese cuisine, but it contains fish. To ensure a fully vegan experience, politely ask if fish sauce is used in a dish before ordering and request its omission when dining out.
Vegan-Friendly Country with Regional Twists:
Vietnam’s Buddhist roots contribute significantly to its vegan-friendliness. Developed areas offer a good selection of eateries, stalls, and restaurants catering to vegan and vegetarian preferences.
Regional flavor preferences add another layer of intrigue to vegan cuisine in Vietnam. Southerners tend to favor sweeter flavors, while those in Central Vietnam lean towards salty and spicy dishes. Northern cuisine offers a more balanced flavor profile, often incorporating a variety of herbs and medicinal elements.
Finding Vegan Options:
It’s important to note that vegan options might be less readily available as you travel further north in Vietnam. Southerners and those in the south-central region (Hue to Ca Mau) tend to adopt vegan diets more frequently than their northern counterparts.
Buddhist Influence on Veganism:
While some Vietnamese follow a fully vegan diet as a compassionate Buddhist practice, many observe a partially vegan lifestyle. This means they might eat a vegan diet for two or four days each lunar month, typically on the full moon and new moon days. During these times, many non-vegan vendors offer vegan dishes to cater to this tradition.
Vegetarian Paradise:
Vegetarians are in for a treat in Vietnam! Vietnamese kitchens are renowned for their balanced, flavorful, and healthy dishes that make generous use of fresh vegetables and herbs. From dedicated vegetarian restaurants to meat-free variations of popular local dishes, you’ll find an abundance of delicious options throughout the country.

A Vegetarian’s Paradise in Vietnam
While Vietnamese cuisine varies across the country, certain dishes remain popular nationwide. Steaming noodle soups, crunchy banh mi sandwiches, fresh spring rolls, pickled vegetables, and robust Vietnamese coffee are all staples that can be enjoyed in different regions.
Vegetarian-Friendly Options Abound:
Many Vietnamese restaurants offer a variety of salads, cooked vegetables, and dedicated vegetarian sections on their menus. For breakfast, you can enjoy a delicious banh mi sandwich with egg or a comforting bowl of mushroom congee. Lunchtime options include refreshing salads like banana heart or lotus stem with rice crackers, or hearty noodle soups filled with fresh greens and flavorful broth. Dinners offer a delightful mix of dishes, such as garlicky water spinach, grilled eggplants, tofu in lemongrass and chili, caramelized mushrooms, and colorful five-color fried rice.

As a vegetarian in Vietnam, you’ll never go hungry. In fact, you might find it difficult to leave the country with so many delicious options to explore!
