- Schedule :
- 10 :00 am : arrive at Troc’s Kitchen & Cooking Class in Phu Quoc .
- 10 : 15 am : introduction with complimentary coffee . The learners will get the chance to share with our chef how to make the authentic Vietnamese dripping coffee .
- 10 : 45 am : start to cook and taste the food course by course until done on each menu option . Complimentary drink are available.
- 14 :00 pm : Time to enjoy the fruit plate and receive certificate or gifts. End of the cooking class.

- Saigon-style noodle salad (Bún thịt nướng): A refreshing salad made with fresh rice noodle , grilled pork, fresh herbs, and a tangy fish sauce dressing.
- Vietnamese pancakes (Bánh xèo): Crispy savory crepes filled with shrimp, pork, bean sprouts, and scallions. Served with a variety of fresh herbs and a dipping sauce. Caramelized pork or fish (Thịt kho tộ hoặc cá kho tộ): A classic Vietnamese dish featuring pork or fish simmered in a rich caramel sauce , creating a sweet and savory flavor.
- Steamed banana cake (Bánh chuối hấp): A delightful dessert made with ripe bananas, steamed to perfection for a soft and moist texture serve with fresh coconut milk sauce .

The menu
Before stating to enter to the Vietnamese Phu Quoc cooking class Chef Troc always introduce and interview with all the participants.
After some chatting about how you been spending your time in Phu Quoc and our background in the food industry, Chef Troc will starting off the session showing you how to brew a cup of Vietnamese coffee .
Coffee (mainly Robusta and Arabica) is a major produce here in Vietnam, and Vietnam is the second-largest global coffee exporter after Brazil. This has contributed to Phu Quoc’s coffee culture – coffee shops and cafes line most of the major streets and tourists will not be short of options when they need a java fix. We will not show you how to make a cup of Vietnamese by any machine .
We will show you how to do it by filter ( The Phin ) this phin ( filter ) you find it easy to bring home and so convenient to make .
The extra coffee lesson

Troc’s kitchen team also offers you a bottle each of Bitter Lager / Kính Beer , whose founder is a close friend of our Chef Troc . Kính Beer is one of Phu Quoc’s locally made (and probably best) brews this is our opinion . This helped keep you fueling throughout the class.
Once you get the beers out of the way, it will time to get starting on the food. The first dish you tackling will Vietnamese deep fried spring roll (chả giò) made with rice paper, minced pork meat + prawn , carrot cute , sweet potato cute …. and fresh greens and herbs, with a spicy, savory dipping sauce made with fish sauce – the soul of Vietnamese cooking and a major ingredient used in pretty much all of the local dishes.
You will going to learn how to make the fillings and how to roll correct way.

After completing all the rolls we will show you how to deep fried correct way how is your rolls are crispy , glodden gourd and it is not oily

The second dish you will hands on it a bowl of fresh noodle salad Saigon’s style (bún thịt nướng / bún chả giò ) made with rice noodle , chicken lemongrass,The first dish we tackled was fresh spring rolls (gỏi cuốn) made with rice paper, prawns, and fresh greens and herbs, pickle , with a spicy, savoury dipping sauce made with fish sauce – the soul of Vietnamese cooking and a major ingredient used in pretty much all of the local dishes.
Bún Thịt Nướng consists of rice noodles, grilled pork, and fresh vegetables. When fried spring rolls or egg rolls (Chả Giò) and shrimp (Tôm) are added, the dish is called Bún Tôm Thịt Nướng Chả Giò.
This dish is topped off with a mix of fresh vegetables and herbs, crushed peanuts.
If you’re looking for something light and refreshing, try this popular Vietnamese noodle dish, Bún Thịt Nướng. This dish is the Southern version of Bun Cha Ha Noi , a Northern version that is essentially the same thing but with grilled pork meatballs and the use of papaya in the sauce.

Next, you will hand at Vietnamese pancakes (bánh xèo) made from rice flour, fresh coconut milk ( you will made the fresh coconut milk in the class with Chef ) , and turmeric (which gives it its bright yellow colour), cooking in a dash of oil and filled with loads of leafy greens and meat of your choice.

Class designated as Full Payment
Refund Deadline: Refunds are available up to 14 days before your class starts.
No Refunds Within 14 Days: If you cancel within 14 days of your class, we cannot provide a refund.
Class Exchange: You can exchange your class for another Troc’s Kitchen and cooking class. Refund Amount: Refunds are 50% of the total payment for your cooking class.

- Deposits: Unfortunately, deposits for your cooking class are non-refundable.
- Class Exchange: Within 30 days of booking, you can exchange your class for any other Troc’s Kitchen cooking class. This allows you to choose a different date or theme that better suits your schedule or interests.
Important: Class exchanges are only valid within the 30-day window.
